Coffee Cupping In Colombia | Gadling.com

"A hint of chocolate, a whisper of citrus," he tells the barista. He's a foodie, so unlike me, he actually smells these aromas. This isn't a wine tasting - I'm at a coffee cupping in a coffee lab in Bogota, Colombia. Coffee cupping is a ritual taken very seriously by food and wine geeks, and an intriguing challenge for caffeine addicts like me.

We're standing around a table in the pristine lab that's tucked behind a glass wall in E&D Caf?s. Locals seated at tables in the coffee bar on the far side of the glass drink espresso and stare at us, while cafe owner Jamie Duque introduces us to the ritual.

Ten empty cups sit on the table before me near a metal bowl, our spittoon. We start by taking a sip from each of the first four cups, which have been filled with different types of water. After each sip, we spit into the metal bowl before moving on to the next one. Deciding which cups hold the sweet, salty, bitter and acidic tastes helps activate our palates.

I step back to take a picture and bump into the metal counter that stretches the length of the room. On it, there's an industrial-size coffee grinder and containers with clear water that Jean's assistant is using to fill our coffee cups. A colorful coffee taster's flavor wheel hangs on the wall. At one end of the room a massive coffee-bean roaster sits against a brick wall and there's a lingering smoky scent, perhaps from the last coffee that was roasted.

Apparently there are more than 30 different aromas a truly sensitive palate can taste while drinking coffee, according to Duque. Coffee from the central region of Colombia, for example, tends to be sweet because sugar cane also is grown in the same location. Coffee from Sumatra, however, has a more earthy taste, because the beans dry on the soil, Duque says.
After this discussion, we move to three more cups that have been filled with samples of the inexpensive brands of coffee one buys off a supermarket shelf. Duque pours water into them and says, "Break the crust gently by moving the spoon back and forth to release the aroma. Then, sniff hard."

I follow his instructions but have to swallow a giggle listening to my friends sniff like they are in the fourth day of a cold. Here's when the suggestions start flowing. "Chocolate," "bitter," "sweet," different people reply. I keep quiet, recognizing that subtle coffee tastes are not my fort?. To me, it's "just right," "too strong," or "too weak."

The remaining cups are filled with carefully measured amounts of three different types of ground coffee beans that were picked in different growing areas in Colombia. (To create good coffee, the amounts used are very important, according to Duque.) After going through the sniff routine, we move on to the "slurp" movement we were taught when tasting the first three cups. We gently skim off the crust that's formed on the top of the coffee in our cups and toss it into the spittoon. Then, as Duque had explained, we proceed to "slurp" a bit of the brew and move it around our mouths to sense the coffee's essence. For the next few minutes, it sounds as if we are in a Japanese noodle shop, slurping noisily to show our appreciation for the taste.

Finally, the specific coffees we are tasting, and the region each comes from, are revealed. After amiable arguments about which brew has the best taste, we're each allowed to choose our favorite and take 100 grams of beans back home to the States.

As we've been tasting, Duque has been scribbling facts about Colombian coffee on the glass wall with a black pen. Duque has a friendly face, with a smile that invites friendship but disappears when he starts giving you facts about the coffee industry in Colombia. At times, listening to him is like learning from a college professor teaching a popular class. He explains that there are 800,000 coffee farms in this country and about two million people make their living directly or indirectly from coffee. The coffee is grown mostly in small farms on land that's between 1,100 and 2,000 meters above sea level. The types of soil differ greatly, ensuring different coffee profiles.

Duque knows these facts because he's a driving force in Colombia's coffee industry. An agricultural engineer by training, his youthful looks - despite slightly thinning black hair - belie that fact that he has spent 20 years working with coffee growers and producers. His focus: to help coffee growers reach social, technical and environmental sustainability, in part through the implementation of certification programs to ensure quality coffee. In the lab he designed at E&D Caf?s (which stands for Education and Development of Coffees), he works with coffee producers and retains an overview of the coffee chain, from the growers to the baristas making cappuccinos for the line of locals in the coffee bar.

If you're visiting Bogota, you can arrange to partake in a coffee cupping in the lab at E&D Caf?s. It takes about one- to one-and-a-half hours, and it costs approximately $25 a person, although the price for bigger groups is flexible.

Drink, slurp, spit! The essence of a coffee cupping. Back home, after brewing the coffee I purchased at E&D Caf?s, it's strictly "drink, drink, drink" ? and savor the memory of a special day.

Beijing apologized for the embarrassing incident on Monday, in which an unidentified man ripped the Japanese flag from the ambassador?s car amid rising tensions over disputed islands in the East China Sea.

A Chinese Foreign Ministry spokesman said the government was undertaking a ?serious investigation? and would guarantee foreign diplomats? safety. That did not stop Japanese Foreign Minister Koichiro Gemba from formally demanding an investigation on Tuesday, calling the incident ?deplorable.?

Thousands of anti-Japanese protesters took to the streets of cities across China last weekend for the second straight week, burning Japanese flags and vandalizing Japanese restaurants and businesses.

The violence is the latest flare-up of a long-simmering row between Beijing and Tokyo over ownership of a handful of uninhabited rocky islands known here as the Diaoyu and in Japan as the Senkaku islands. The islands are surrounded by fishing grounds, and sovereignty would confer rights over nearby undersea oil and gas deposits.

The most recent war of words broke out between the two Asian neighbors a month ago, when Japanese Prime Minister Yoshihiko Noda appeared to suggest that his government might seek to buy the islands from their private Japanese owner, an idea championed by maverick Tokyo governor Shintaro Ishihara.

That prompted a sharp response from Chinese Foreign Ministry spokesman Hong Lei, who expressed Beijing?s ?strong displeasure? with what he called Mr. Noda?s ?highly irresponsible? remarks.

Tensions rose further when a group of Chinese activists from Hong Kong landed on one of the disputed islands on Aug.15, the 67th ?anniversary of Japan?s surrender at the end of World War II.

After they had been arrested by the Japanese coast guard and expelled from Japan, a group of right wing Japanese activists landed on another of the islands to make their own point for a couple of hours, before coast guard officials persuaded them to leave.

Nationalist and anti-Japanese sentiment is strong in China, where the authorities have long encouraged it in their citizens from an early age through history books that often inflame resentment against the former invaders.

The Chinese government faces a delicate task, however, not wanting to appear soft on Japan yet anxious to keep protests from turning into expressions of dissatisfaction with the Chinese authorities themselves, or from spilling over into violence that might seriously harm relations with Tokyo.

The Japanese authorities too appear anxious not to let the dispute get out of hand. The government yesterday refused a request from the Tokyo municipality for permission to land a delegation on the islands.

New Jersey produce company recalls mango products

(AP) ? A New Jersey produce company recalled a number of products distributed in the Northeast that contained fresh-cut mangoes Saturday because of potential salmonella contamination.

The products in question have an expiration date of Aug. 28, but the company, F&S Produce Co. Inc., working with the Food and Drug Administration, issued the voluntary recall regardless.

No illnesses have been reporting in relation to products from F&S Produce, of Rosenhayn, N.J. Federal health officials are investigating 103 known cases of salmonella infection not related to the recall Saturday.

The measure follows a recall by Splendid Products of five lots of mangoes imported from Mexico. The mangoes carry the Daniella brand sticker. Health officials in the U.S. and Canada are trying to figure out which brands or sources of mangoes caused the illnesses with other products. No deaths have been reported.

F&S said that products with mangoes that fall under the recall were distributed to grocery and convenience stores in the Northeast. The mangoes, which were processed between Aug. 9 and Aug. 19, used mangoes sourced from Mexico that are part of a current salmonella outbreak.

"Products produced with use-by or sell-By dates of August 29 or later, have been processed using mangoes sourced from Brazil, and are not associated with this recall," the company said in a statement.

F&S Produce notified customers who received the recalled products directly and requested that they be pulled from store shelves.

Following are products recalled by F&S Produce by label, all with an expiration date of Aug. 28, unless otherwise noted:

Delish!: Mango Spears 5 ounce Cantaloupe; Mango, Pineapple Spears 5 ounce; Fruit Burst 10 ounce; Tropical Medley 10 ounce; Mango and Berry Mix 10 ounce; Mango Spears 1 lb.

Garden Highway: Mango Medley 1 lb.; Tropical Mango Spinach Salad 7 ounce.

Garden Pure: Mango Chunks 5 lb.; Mango 9 ounce ; Fruit Medley 3 lb.; Seasonal Fruit Bowl 4 lb.

Signature Caf?: Fruit Basket Medley 30 ounce.

Trader Joe's: Tropical Fruit Medley 1 lb.

Generic Label, sold at Wal-Mart (expiration date Aug. 25): Mango Spears 1 lb.

Sudan seizes two newspaper Sunday editions: editors

KHARTOUM (Reuters) - Sudanese security forces have confiscated the Sunday editions of two newspapers, editors said, the latest in a crackdown that has hobbled the country's independent media.

Censorship was officially abolished in Sudan in 2009, but the secession of South Sudan a year ago, border tensions, and a spate of small anti-government demonstrations have worsened the situation for press freedom.

Authorities confiscated copies of the independent al-Sahafa, one of Sudan's oldest dailies, after it had been printed, the newspaper's editor Alnoor Ahmed Alnoor said.

"We consider the confiscation to be equal to an economic penalty on the newspaper," he said, adding the authorities did not give a reason for the seizure.

A security agent also went to the printing house of the al-Jarida newspaper after midnight and banned it from publishing, managing editor Idris al-Douma said. "They confiscated every copy of the paper," he said.

He too said he was not given a reason why the papers were seized.

The security agency did not issue any immediate statement. The National Press Council, which is in charge of licensing newspapers, could not be immediately reached for comment.

Sudan ranks 170th of 179th in a global press freedom index compiled by Reporters Without Borders, a media watchdog.

The Arab-African country has been facing an economic crisis since South Sudan broke away more than a year ago under a 2005 peace deal, taking with it about three quarters of the country's economically vital oil production.

The situation was worsened when the landlocked South shut down its entire output in January in a dispute with Khartoum over how much it should pay to export through the north.

Tough austerity measures announced in June to plug a budget gap sparked a series of anti-government demonstrations, but the protests have mostly petered out since then under a heavy security crackdown.

Sudan and South Sudan are set to resume talks over border security that could open the way to resuming oil exports after the two struck an interim deal on fees last month.

I met Dave K through blogging and it was a great privilege to preach at his wedding yesterday. True to form he wanted a law-gospel sermon on 1 Corinthians 13. ?Here?s what I came up with

?1 Corinthians 13? taps into your highest longing and your deepest fear.

Your highest longing is in verse 12. It?s that little phrase ?face to face.?? That?s your highest longing.? In the words of Mumford and Sons ? You were made to meet your Maker.? And not to meet your Maker face to floor ? to meet Him face to face.? This speaks of intimacy, friendship, relationship, love.? You were made for face to face with Jesus your Maker.? That?s what this whole third paragraph is about ? the future is face to face.? In fact so was the past.? The Bible says that before there WAS a world, there was face-to-face.? Before there was a universe, there was Father, Son and Spirit ?face to face? ? united in love.? Wind back the clock into the depths of eternity and you don?t find mere chemistry ? you find community.? That?s why the greatest things in life are a meeting of hearts and minds.? That?s why relationships are so precious.? That?s why we love weddings ? we love face to face.

But every earthly experience of ?face to face? is, in the words of verse 12 ?a reflection in a mirror.?? The old King James Version rendered it ?seeing through a glass, darkly.?? Every kiss you?ve ever wanted, every affirmation you?ve ever craved, every relationship you?ve ever pursued, every longing you?ve ever felt ? it?s a reflection of the ultimate face to face.? This wedding ? is an incredible reflection of the real face to face ? Jesus and His people, united in love.? This reflects that ? that?s why we love this so much.

Because our highest longing is love.? Not just earthly reflections: face to face with Jesus our Maker.? That?s the longing behind every other longing.

But this passage also tells you your deepest fear.? Your deepest fear is in verse 2.? It?s also a 3 word phrase.? Look at the last three words of verse 2. That?s what terrifies you. It terrifies me.? My deepest fear is that ?I am nothing?.? Your deepest fear is that you are nothing.? You worry you don?t amount to anything, that you?re actually a nobody, you are pointless, you?re a zero, completely insignificant in the universe.? That?s the voice that whispers to you at 2 in the morning.? And it?s the fear that drives you to a relentless pursuit of performances and experiences and face-to-face relationships ? some healthy, others unhealthy ? but none of them dislodge the fear that you are nothing.

This passage explains your life.? You?re made for face to face, you?re terrified that you?re nothing.? And this passage can tell you how to answer your fears and fulfil your longing?.
